For the IELTS, try to use as strong a word as possile to start your Academic task 1 and also task 2 essays. For the General task 1 letter, often you will need to start with "Dear" etc., however for the first word of the first sentence after the greeting, try to use an extra high-level word.  

For instance, for the task 2 essays, you could use the word "indubitably", which means "beyond a doubt". For the task 1 academic, you can try to use a word such as "Greetings..." etc., such as:

"Dear John.

Greetings and I hope that...".
